Proprietor’s Reserve La Mesa: Urban Winery

Our new, split-level La Mesa location—scheduled to open holiday season 2009—embraces the intimacy of our original shop, adds space, an outdoor deck, and San Diego’s first "urban winery".

 

We're equipping the 4,000 sq. ft. first floor of the building with all the implements of a modern winery. Mixing tubs, fermentation tanks, oak storage barrels, bottling implements, and climate-controlled storage racks and lockers.

 

To this, we add wine's raw ingredient - “juice”. (Really, that's what the experts call it.) We're collecting a selection of varietals from some of the most coveted regions in the world.

 

Then we add you.

 

Yes, you. We’ll have winemaking experts on hand to steer you right, but you’re doing the making. The result is 25 cases of your own bottled vintage, suitable for drinking and/or gifting.

 

You can do it alone, sharing your very own label with with those you care about (or care to impress). Or you can do it with a group. It's the perfect occasion to gather friends and family to participate in the entire process. Celebrations, corporate retreats, teambuilding, or just gathering close friends. If you want to brew with a group, but don’t have one handy, we can match-make.

 

Either way, no spectators allowed. Everyone gets hands-on with the decisions and equipment. From selecting the varietals—Red or white? Sweeter or drier? More or less oak?—to mixing, adding fermentation yeast, corking, even label design.

 

You’ll even be able to select the level of fire-toasting performed on the aging barrels (light, medium, or dark oak).

 

Speaking of aging, wine takes time. We store your barrel during that period (typically 6 to 12 months) and notify you when it's time to return for bottling.

 

After that, you’ll be able to enjoy your handiwork. You might even want to sip it upstairs or on the deck. Did we mention it was also a wine BAR?
